New Mexico Guajillo Pepper (Capsicum annuum longum group 'Guajillo') is a sweet and mildly hot chili pepper from Mexico. It is commonly used with ancho and pasilla to make authentic Mexican mole sauces. Excellent for salsas and sauces. Peppers will grow to be 3 1/2" long by 3/4" wide and will turn from green to orange to red to brown with maturity. Commonly used for red enchiladas. SHU of 3000 - 5000
